Christmas was hard on our wallets, but a gal’s still gotta eat!

Now that we’re all desperately trying to settle back into work, college and school, and the daily struggle routine is starting to feel relatively normal again, we’re beginning to think of all the little things we once though of pre-Christmas; namely, food.

Cheese boards and paté are, unfortunately, not a sustainable diet once you’re back to work and the half-empty tins of Roses does not a healthy dinner make.

But with budgets at an all-time low (don’t worry, we’re all in the same boat), making dinner is not as easy as we once thought. But fret not our lovely readers; we’re here to make your life a helluva easier. Budget dinners don’t have to include frozen pizzas and pasta with sauce – leave those to the college-goers.

Pesto Courgetti – Serves 2

3 Courgettes

Tub of Pesto

Parmesan

Spiralize the courgettes (depending on what utensils you have to spiralize, this can take a bit of time but the results are delicious). Throw the courgetti in a pan and fry with some oil. Throw in the pesto and give it a good stir! Finally, finish off with mountains of grated parmesan – you deserve it.
