A bit of shoespiration on a Tuesday! We can barely believe our eyes these mornings when we’re leaving our house to head to work and we can see what’s in front of us. The mornings are getting brighter and we’re actually visibly experiencing real daylight for a few minutes when we finish work too. That can only mean one thing: spring is coming (and inevitably summer too!) which is good news all round really. Thanks to a Balfes and BodyByrne Fitness combo… In the U office, we try to be good about our healthy breakfasts Monday to Friday but we’re only human, so we're definitely guilty of slacking off on the weekend. And pretty much every afternoon, when we get a bit of a sugar dip. Despite this, we know deep down that breakfast is the most important meal of the day and it’s just got a whole lot more interesting now that BodyByrne Fitness has teamed up with Balfes to create the ultimate power breakfast menu. People are also much more open to healthy alternatives. Whenever I make suggestions to guests here at Balfes, they really love when it’s a healthy option.” So if you’re a morning gym bunny, this could be exactly what you need post work out and ahead of a monotonous day in the office. The new breakfast menu options include the likes of Bodybyrne Eggs Florentine, BodyByrne oat pancakes served three different ways as well as Turbo Energy Granola and Bircher Muesli Energy Booster. They’re available weekdays from 8am – 11.30am and will be part of the weekend brunch menus too. As a little taster though – and so that you can get a healthy start to your day at home – Balfes and BodyByrne have given us three ultra healthy breakfast recipes to try ourselves. It is 80% nutrition and 20% exercise; abs really are made in the kitchen. Restaurant Manger David Murray's healthiest tip: Try to eat slowly so that my body has time to recognise what it has eaten as opposed to gulping food down and suddenly feeling very full. BodyByrne Florentine Serves 1 2 Poached Eggs served on slice of wholemeal bread and spinach drained well. For the sauce: 2 desert spoons of greek youghurt, quarter tspoon mustard, 1 desert spoon of fresh lemon juice, pinch of Cayenne pepper and salt and pepper to taste in a low heat pan and lightly heated for 3-4 mins. BodyByrne Oat Pancakes Serves 4 500gr organic oats 2 eggs 2 tablespoons Greek 0% Fat yoghurt Dash of milk of choice Cinnamon (optional) Stevia (optional) Water added slowly Blend all the ingredients together to form a thick mixture, adding water slowly so mixture doesn’t become too liquefied. On a hot nonstick pan add a quarter teaspoon of coconut oil. Spoon or pour out mixture on pan. Lightly fry for a few minutes on each side until lightly golden. Serve with drizzle of Maple Syrup or Agave optional. Almond Butter Recipe Approx 3 cups of organic almonds Place Almonds in an oven 250F for approx 15 mins to warm them - this will help the oils combine the mixture better. Place the almonds in a food processor fitted with an "S" blade. Scraping down the sides every few minutes this process can take up to 20 minutes so be patient. The butter should be smooth and creamy in texture. Store in a sealed jar.

If it makes us even the slightest bit happier going to a fitness class on a Monday or encourages us to get up that little bit earlier to make a healthier lunch, we'll take it while we can...
